when carbon dioxide (the same gas that plants breathe in every day) is exposed to high pressure, it turns into a liquid. this liquid is used as a solvent that pulls out the fragrant and nutrient-rich oils from its botanical source. at normal temperature, the co2 reverts back to a gas and evaporates, leaving the essential plant extract behind and no excess solvent.
